Shrimp with Feta and Capers
serves 4
Ingredients
- 1 T butter
- 12 ea shrimp, peeled and deveined
- 2 T capers
- 2 t lemon juice
- 1/2 C feta cheese
- 1 T parsley
Options
- risotto
- angel hair, fettucini, or linguini pasta
- white rice
Instructions
- Sauté the shrimp in the butter, then add the capers, lemon juice and feta cheese. Season to taste.
- Simmer until the cheese is melted.
- Plate (over risotto is best), garnish with parsley and serve.
